Recipe: Chocolate and Cherry Banana Bread

It's time for heartier, delicious baked goodies like my Chocolate and Cherry Banana Bread. This bread could not be simpler to prepare and you will become a fan of it from the very first bite.  Enjoy for breakfast, brunch and of course with that afternoon cup of joe!

 1 1/2 cups white whole wheat flour
 1/2 cup coconut sugar, sucanat or brown sugar
 3/4 teaspoon baking soda
 1/2 teaspoon salt
 1/2 teaspoon ground cinnamon
 1/2 cup unsalted butter, melted & cooled a bit
 3 very ripe bananas, mashed
 2 large eggs, room temperature & whisked
 1 teaspoon pure vanilla extract
 1/2 cup semi-sweet chocolate chips
 1/2 cup white chocolate chips
 1/2 cup cherries, chopped
 1/3 cup additional chocolate chips for topping

Pre-heat the oven to 350 degrees fahrenheit with the rack in the middle. Prepare a non-stick loaf pan with parchment paper or grease with some butter or canola oil.

In a medium bowl whisk together the flour, sugar, baking soda, salt and cinnamon. In another bowl combine the mashed bananas, eggs and vanilla. Add the wet to the dry and combine well. Fold in the chocolate chips and cherries.

Spoon the mixture into the prepared loaf pan. Top with some more chocolate chips, if desired. Bake for 50-55 minutes or until a wooden skewer comes out virtually crumb free.
