Recipe: Classic Cornbread

love quick breads. They are exactly as the name implies…super quick to throw together, which is an important thing to me this time of the year (leaves more time for me to be on the ski slopes!) This Classic Cornbread will be a delicious addition to your holiday table. A great side for any feast!

Classic Cornbread

 1 cup coarse cornmeal
 1 cup white whole wheat flour
 1/2 teaspoon salt
 1 tablespoon baking powder
 1/2 cup pure maple syrup, brown sugar or honey
 1 large egg
 1 cup milk
 1/4 cup unsalted butter, melted
 optional: powdered sugar & cinnamon

Pre-heat oven to 425 degrees Fahrenheit with the rack in the middle.

Grease a 8-inch pan with butter or canola oil.

Sift together dry ingredients into a bowl.

In another bowl whisk together wet ingredients.

Stir to combine, do not over stir.

Pour batter into pan & bake for 20-25 minutes.

Top with powdered sugar & cinnamon if desired.
