Greek Salad with Tuna

This Greek Salad with Tuna couldn’t be easier to prepare and it’s protein packed with Bumble Bee Solid White Albacore Tuna and gluten free quinoa. Use any and all veggies you have available to you to make this salad extra tasty.

Greek Salad with Tuna
Yields1 Serving

 5 ounces BUMBLE BEE® Solid White Albacore In Water
 1 cup baby asparagus or green beans
 1 cup cucumber, medium dice
 1 cup cherry tomatoes, halved
 1/4 cup feta cheese
 1/4 cup kalamata olives
 6 Greek Peperoncini peppers
 olive oil
 fresh lemon juice
 fresh dill, finely chopped
 fresh mint, finely chopped
 1 shallot, minced
 2 cups cooked quinoa

Prepare the quinoa to package directions. Fluff with a fork and let cool. Toss with some olive oil, dill, mint, shallots and lemon juice to taste.

Evenly divide and top the quinoa with the tuna, green beans or asparagus, cucumber, tomatoes, feta cheese, olives and Peperoncini peppers. Drizzle olive oil and lemon juice over the top. Adjust any ingredients to taste.
