Olive Oil Oven Roasted Leeks

I'm certain that this basic recipe for Roasted Leeks will be helpful to you & will be used over and and over again. These are delicious chopped up on salads and also in savory recipes like pastas and soups.

 4 leeks
 1/4 cup olive oil
 a few pinches fine salt
 a few pinches ground black pepper
optional seasonings
 smoked paprika
 herbes de provence
 thyme
 oregano

Pre heat oven to 400 degrees with the rack in the middle. Cut the bottoms and tops off the leeks, you will only be using the white and light green parts. Cut those pieces in half. Peel off the outer most layer. Rinse any dirt out. Pat dry with paper towels.

Place the leeks in a baking dish or cookie sheet in a single layer. Drizzle the olive oil and seasons over the tops. Toss with clean hands to evenly coat.

Bake for 20 minutes, flip with a pair of tongs. Continue to bake for another 20-25 minutes or until leeks are golden brown and soft. Serve as is or add to recipes.
