Oodles of Sesame Noodles

This recipe is a favorite for kids & adults. Delicately flavored soba makes for the perfect light meal!

 1 package soba noodles (12.8 oz.)
 1/4 cup soy sauce
 3 cloves garlic, minced or 1 tablespoon garlic oil
 2 tablespoons grated fresh ginger (or 1/2 tsp. ground ginger)
 2 tablespoons rice vinegar
 3 tablespoons toasted sesame oil
 2 teaspoons fish sauce
 1/2 cup thinly-sliced green onions
 1 cup carrots matchsticks
 black pepper
 1/4 cup toasted sesame seeds
 1/2 teaspoon sriracha or hot chili oil

Prepare soba noodles to package directions. Run cold water over the noodles to cool. In a large bowl combine soba with the rest of the ingredients. Adjust any to taste. Serve cold or warm. Store in an airtight container up to 3 days.
