Sometimes a salad has lettuce & sometimes it doesn’t. In this case quinoa is the star (which it often is in my recipes.) Citrus is a star here too. So is my Lemon Honey Salad Dressing, which ties it all together.

1 cup dry Quinoa, cook according to package directions
3/4 cup crumbled Feta Cheese
1/4 cup Green Onion, sliced
3 Blood Oranges, peel, remove seeds & cut into slices
2 Navel Oranges, peel, remove seeds & cut into slices
1 Pink Grapefruit, peel, remove seeds & cut into slices
1 Avocado, diced & toss with some Lemon Juice
1/4 cup Honey Lemon Salad Dressing
Garlic Salt, to taste
Black Pepper, to taste
Broccoli Sprouts
Honey Lemon Salad Dressing
1/2 cup Extra Virgin Olive Oil
4 tablespoons Lemon Juice
3 tablespoons Honey
Sea Salt
Ground Black Pepper

Cook quinoa, let it cool & fluff with a fork. Trim fruit into pretty pieces, discarding seeds. Stir salad dressing into quinoa. Carefully fold in citrus, feta, green onion & avocado. Season to taste with garlic salt & pepper. Top with broccoli sprouts.

Shake olive oil, lemon juice & honey in a jar. Season to taste with salt & pepper.
