S’mores Brownies

Brownies inspired by everyone's favorite campfire treat: S'mores. Over here we can't get enough chocolate, gooey marshmallows and crumbly graham cracker crust. These brownies have it all! Try this easy recipe today. Chocolate lovers, you will be addicted.

 '--For the crust
 6 tablespoons unsalted butter, melted and cooled
 1 1/2 cups graham cracker crumbs (about 10 full cracker sheets)
 2 tablespoons light brown sugar
 1/4 teaspoon salt
For the brownies
 1/2 cup (8tbsp) unsalted butter
 4 ounces unsweetened chocolate, chopped
 1 cup packed light brown sugar
 3/4 cup white sugar
 2 teaspoons pure vanilla extract
 3 large eggs
 2/3 cup all purpose flour
 1/2 teaspoon salt
 1 cup semi sweet or milk chocolate chips
 3 cups mini marshmallows

Prepare an 8x8 inch pan with parchment or foil, let 1 inch hand over the edges. Or use a disposable 8X8 inch tin pan like I did, grease it well.

Pre heat the oven to 325 degrees with the rack in the lower 1/3 position.

For the crust

Pulse graham crackers in a food processors until you have a fine crumb. Move to a bowl and combine with the melted butter sugar and salt. Bake for 20 minutes, until the crust is golden brown.

For the brownies

Increase the oven heat to 350 degrees, with the rack in the center.

While the crust is baking prepare the brownie batter. Over a double boiler melt the butter and chocolate together. Once melted, remove from the heat and stir in the sugars, vanilla and eggs. Mix the the flour, don't over mixed. Quickly fold in the chocolate chips.

Place in the oven for about 25 minutes or until a toothpick inserted comes out virtually crumb free.

Set the oven to broil, top the brownies with marshmallow. Broil for just 2-3 minutes, be careful as the marshmallows will burn very quickly if left under the broiler for too long.

Place brownies on a rack and cool completely before cutting. Periodically rinse your knife with hot water if it gets too sticky.
