Soft Pumpkin Cookies

Cookies are great, cookies you can enjoy for breakfast, snacks & dessert….even better! These Soft Pumpkin Cookies are filled with high quality ingredients that makes them way more guilt free than most of the other recipes you will come across.

 2 1/2 cups white whole wheat flour
 1 1/2 cups date or coconut sugar
 1 teaspoon baking powder
 1 teaspoon baking soda
 2 teaspoons pumpkin pie spice
 1/2 teaspoon salt
 1/2 cup unsalted butter, room temperature
 1 cup unsweetened pumpkin puree
 1 large egg
 1 teaspoon pure vanilla extract
 powdered sugar to finish

Pre heat the oven to 350 degrees F with two racks in the middle. Prepare 2 baking sheets with parchment paper or Silpat liners.

In a bowl whisk together dry ingredients. Cream together the butter, sugar, pumpkin & vanilla with a stand mixer. Slowly add in the dry ingredients in 3 portions. Combine well until you have cookie dough.

Roll dough to form 1 inch balls. Place on the cookie sheets. Bake 15-20 minutes or until just browned on the bottoms.

Transfer cookies to racks to cool & finish with a light dusting of powered sugar.
