You will be so surprised when you try this soup, it's completely vegan & free of any animal based ingredients. It's a full flavored and very satisfying.

1 batch roasted leeks (from this recipe: https://marlameridith.com/olive-oil-roasted-leeks/)
7 cups low sodium vegetable broth
1/2 cup jasmine, basmati rice or long white rice
2 cloves garlic, smashed and chopped
salt and pepper to taste

Roast the leeks to recipe directions here: https://marlameridith.com/olive-oil-roasted-leeks/ Let the leeks cool. Roughly chop.

In a large soup pot bring broth to a boil. Add the roasted leeks, rice and garlic. Boil, then simmer for 30 minutes or until rice is done cooking.

Let the soup cool then transfer batches to the blender and purée. Reheat the soup if needed and serve immediately.
