Recipe: Vegan Maple Cranberry Oatmeal

Looking for a new way to prepare oatmeal? Try this healthy, delicious, vegan Maple Cranberry Oatmeal recipe. It's a comforting meal on chilly fall and winter days.

  • Yields: 6-8 servings

Ingredients

4 cups water

2 cups old-fashioned oatmeal

1 cup fresh/frozen cranberries

1/4-1/2 cup pure maple syrup

1/2 tsp ground cinnamon

1/4 tsp salt

toppings

1/2 cup chopped toasted walnuts or pecans

1/2 cup dried cranberries

Directions

1In a medium saucepan, bring water to a boil with the cranberries, maple syrup and salt. Cook about 3 minutes until cranberries start to burst. Add in the oats. Reduce the heat to medium and cook about 5 minutes, or until the oatmeal is cooked to your liking.

2Place in a serving dish and top with the nuts and dried cranberries. Serve hot.
