Recipe: Watermelon Granita

 6 cups cubed seedless watermelon (flesh only, rinds removed)
 1/4 cup freshly squeezed lime juice
 1/4 cup granulated sugar or agave
 pinch of salt

Puree the watermelon, lime juice, sugar and salt in a blender until smooth.

Strain through a fine mesh sieve into a 13"x9" shallow baking dish. Discard solids.

Freeze mixture for 30 minutes, then scrap with a fork.

Continue scraping every 30 minutes for 2 1/2 to 4 hours until the entire mixture is fluffy shaved ice.

Serve with a watermelon wedge as garnish.
