The chocolate sprinkles make these super fun! My kids would think they are cupcakes. I don’t have to tell them they are healthy muffins, right? 🙂

Marla, these look so good, and I’m loving the addition of chocolate sprinkles. Since they’re “skinny” muffins means that I can have 2!

This may be a silly question but I’m always confused when measurements for coconut oil is given…do I melt 4T of the solidified oil or is it 4T once the oil is melted? I always melt and then measure but not sure if that’s correct…thanks! These look great!

Hi! I just scoop the 4 tablespoons of firm coconut oil then melt it. Honestly, I’m not sure whats proper…but it works every time!
