Just when I never thought I would eat fried rice again ~ Â my over active mind came up with this recipe. I LOVE that silly spaghetti squash can be used to replace pasta, grains and rice. It’s firm texture and mild flavor adapts easily to all kids of sauces and ethnic food styles.

Don’t know about you, but I have serious issues & fears thinkin about cutting into a rolly polly spaghetti squash. Nothing like a large, round, super hard object and a giant chefs knife.
To avoid losing fingers and limbs I always pierce the flesh first (to release any steam so the squash does not explode in your oven.)
Then I bake the heck out of it or microwave it (shorter timing) until it is cooked just right.
I just love all the bright & happy colors in this dish…yellow, orange and green. Eating the rainbow.

Great idea! I just posted a spaghetti squash bake on my blog last week, and it was a hit (with both my husband and a few blog-friends that have tried it). It’s my new favorite way to prepare it. I’ll have to try the fried rice idea next, though.

I have a huge spaghetti squash sitting on my counter and now I know what I am going to do with it! This looks delicious. Do you think it would taste just as good without the fish sauce? Or could I replace it with something else?
Yes it would! Just add soy sauce or tamari to taste. Enjoy!

Approximately how large of a spaghetti squash would I need for this recipe? I have seen huge ones and tiny ones (no medium) at my grocery store so I am trying to figure out how many lbs I need for this?
Hi Meg, I usually opt for larger squash and then adjust ingredients accordingly. Whatever you don’s use in this recipe just toss with some garlic salt, parmesan & olive oil.
