My Super Simple Avocado Pasta Salad is a go-to recipe that I make often for lunch & light dinners. A simple combo of lime, parmesan, fresh avocado, olive oil, garlic salt & pepper are all you need to whip up this dish in a jiffy!
My kiddos just started spring break & we are off & running. The Moose has a few days in doggy boot camp (he LOVES it there!) and I’ll spend some time in NYC with my kids. Then it’s off to Vail for Taste of Vail, one of my favorite food & wine events in ski country.
Moose & I had so much fun road tripping through the Colorado high country together!
After I dropped him off I made a quick pit stop in Vail en route to NY. It was so fun to see my friends for happy hour!
