Sometimes a mountain girl needs to touch base with her wanderlust side. She needs to leave her mountain town & explore others…what she might find is something very unique & special.
Last week I was invited to tour & learn about beautiful Beaver Creek, CO. What did I find there? Perhaps another mountain town to fall in love with.
Through research and some amazing folks I found myself staying at The Osprey at Beaver Creek.
My guest room was of generous size & very well appointed. This is a RockResorts boutique hotel, with 45 rooms it is very possible to make yourself right at home!
I was obsessed with my fireplace ~ whenever I was in my room it was glowing brightly.
The staff was more than helpful with any question I had. For me it is of upmost importance to be greeted with a smile & to be surrounded by happy people.
The staff at The Osprey was courteous, professional, informative & a very fun bunch!
The skiing at Beaver Creek? Well let’s just say it’s AMAZING!
The Osprey Hotel is perfectly situated on the ski mountain with Strawberry Park chairlift at the ready, just a few steps away from the back door.
This is true ski-in, ski-out access. I took some amazing turns all over this mountain. There had just been a snow storm & the powder was brilliant. Plenty of bluebird skies too!
The location & amenities of The Osprey make it perfect for families with children of any age & for couples looking for the ultimate getaway.
There is a chapel a few steps up the road where many couples marry & the Osprey can be your destination for an iconic mountain wedding!
Ready to talk food? Great! Let’s go…this is Butternut Squash Ravioli with Toasted Pumpkin Seeds & Sage Pesto.
A highlight of my stay was spending time in the kitchen with Executive Chef David Burton Sanchez.
He shared many of his signature recipes with me & I got to sample (dive into!) everything you see here. I know, tough job I have eh?!
His full flavored dishes can best be described as Elegant Comfort Food Re-Imagined.
What does that mean? It means he takes classic comfort food dishes like Buffalo Chicken Wings & reinvents them…
Chef David prepared these Quail Drumettes which are Oven Roasted Bandera Quail Wrapped in Smoked Bacon with a Bulleit Bourbon Maple Glaze. Instead of a tradition carrots, celery & bleu cheese side.
He serves the drumettes with a Rainbow Radish Slaw delicately flavored with bleu cheese & a light dressing.
Look at the sauce on this quail. The caramelization on the pan was stunning!
Next up…Poutine Re-Defined….with Foie Gras!
Check out how Chef David reinvents the classic Canadian dish of french fries & gravy. This is Seared A Hudson Valley Fois Gras with Potato Frites, Cojita & Maple Demi Gravy.
A delightful sweet/savory blend of flavors.
Above is Pan Seared Scallops with Sweet Corn Risotto, Bacon Jam Agrodulce & Voodoo Sauce. Yes. Yes. More please.
Love the look of that risotto in the hot pan! Such a pretty color.
Bet you are curious about that salad in the first photo? Well that my friends is a must have Pork Belly Cobb Salad.
Heaven in a bowl, especially for a gal who loves her pig!
Check out this Turtle Pots de Creme dessert. A reinterpretation of Turtle chocolates. So fun! Vanilla Creamy Custard is topped with Valrhona dark chocolate, Walnuts and Swiss Caramel Topping. There is plenty to share, but why do that when you can order two!
This is rustic mountain/ski food extraordinaire.
I enjoyed spending time in the beautiful Osprey Lounge, both for hanging out & dining.
I love the chic, rustic, modern yet comfortable decor.
Don’t forget to hang out by the pool & hot tub…
There are many unique experiences one can have on the mountain including Cookie Time, Cocoa & Corduroy (first tracks with a splendid cocoa break.) Great dining options including Beano’s Cabin, Allie’s Cabin, Talons & more. The resort is known for its Ivy League of Ski Schools & excellent Family Programming. Beaver Creek. Our favorite!! I so am lucky that we have this mountain gem in driving distance. The Osprey looks wonderful and I will definitely keep it in mind for an overnight stay. Thanks, Marla!
