Gluten Free Chocolate Vanilla Muffin-Cakes

Gluten Free Chocolate Vanilla Cupcakes with Statue of Liberty topper

There she is Lady Liberty. Perched on a muffin with a coconut dress. Standing tall to honor peace and freedom. Today we all reflect on a day where our world was vandalized. Today we come together to remember, heal, hug and love.

It has been a decade since the horrific 9-11 terrorist attacks. Earlier this week I asked us to bake Remembrance Cakes. Cakes to share love, thoughts and prayers for lives lost. You guys have given true emotions and support for the folks who need it most. You are all amazing!

What were you doing when you heard about the tragedy 10 years ago? What are you doing today to honor and support? We will eat cake and share lots and lots of hugs…..

You know I can never decide whether to call something a muffin or a cake because a muffin is essentially cake. Lady Liberty looks nice standing tall on pillows of freshly whipped cream…

Let’s forget about muffin/cupcake definitions. We have more important things to discuss today.

I made layered chocolate and vanilla muffins to symbolize the darkness and light that we face in life. Happiness is found in the light and somewhere in between. Darkness is made a bit lighter here with chocolate.

As soon as I thought about the idea to post Remembrance Cakes I went on a search to find some cupcake toppers. I was tossed between sweet angels and these New York City toppers. NYC won, I thought the Statue of Liberty is a bit of an angelic gal. She protects the city and it’s people with her torch.

Even though the 9-11 attacks invaded our whole nation & world, these little symbols of life in NY show a vibrant community. A strong place where people live life. Today they will honor loved ones lost forever.

I wish us all great strength today and always…….

Here are flowers from my birthday sent by my 3 sisters in law. I pass the beauty of them on to you all and the ones who need them most. The survivors who lost loved ones in this tragedy……..

Dig into some cake today and give the ones around you great BIG hugs. Chocolate, vanilla, a combo or anything your heart desires…

A bite, a nibble, a munch. A celebration of life and memories.

Together we can bring some lightness into this wild world we live in. At least just for a moment.

Many of you have linked up blog posts in remembrance. You have come together as a strong community and that is beautiful. You all poured your hearts out and baked to remember…thanks for that. I am sure everyone has unique ways to honor and pay tribute.

My contribution are  these little gluten free cakes. Simple to make and even easier to enjoy. I topped ours with some candied orange peel and freshly whipped cream….

We will never forget. xo

  1. Wow, Marla…your photography is just a Work of ART!!! Truly…amazing. You need to be doing food photography and food styling professionally. You are sooo amazingly talented!

And the recipe doesn’t look half bad either 🙂 Ok, it looks scrumptious!

I just linked up to your last post with my latest creation that I just blogged about. Thank you for coming up with such a great idea.

    See you soon!!!!

  2. I love this tribute is so wonderful.

I may not have been born here but I very much feel like a New Yorker. You have managed to choose three of my favorite New York icons The Chrysler Buildindg, Yellow Cabs and Lady Liberty.
And I agree “Today we come together to remember, heal, hug and love.”

  3. Marla, these are beautiful — and look absolutely delicious. I adore the cake toppers! Thank you so, so much for sponsoring this effort. I am so happy to have been a part of it. Sending you and your loved ones so much love on this and every day. <3

  4. Thank you for giving us a place to share our memories with each other. It has been an emotional day for this mother of a commercial pilot. Baking to Remember has been a very peaceful distraction.

    1. Thanks Sarah. Was trying to have that not come off as too goofy. I wanted these cakes to go so far beyond the “cake” glad they made you smile.

  5. Beautiful post! Thank you again for giving us a place to share our recipes and memories–such a great tribute! The NYC cake toppers are just fabulous…LOVE them!
    Sending you peace and love.

    1. Amanda, back at you girl. Thanks so much for participating, baking cakes and sharing your emotions with us. Our community is awesome and it is so great to know we have each other’s backs through everything. xxoo

  6. This is a beautiful post Marla! And the pictures are absolutely stunning, as they tell a story.
Such a great idea to do this!!

  7. Marla- these cupcakes are so cute, and indeed inspire happiness. You completely inspired me to bake a cake, well, cupcakes, this weekend in remembrance! Lovely way to bring everyone together.

  8. Loved the contrast in the cupcakes and your thoughts re: darkness vs. light — and also your heart-shaped plates — very fitting. You made this post special with your special touches, Marla. Thank you.

    1. Kimby…I could not decide what these little cakes were either. Cupcakes, muffins…all is good. All I do know is yummy.
So glad you were touched. Aren’t those heart shaped plates neat??? I stumbled on them in my over crowded prop shelves and knew that they had to be in this post 🙂

This just makes me love and appreciate your recipe creations even more 🙂

  10. Hi Marla!

A beautifully written post and I think your choice of toppers was just right! Yesterday was difficult day for many – for me a bit of a double whammy – remembering 9/11 and saying good bye to my Uncle. That day was truly one of darkness and light – thank you for reminding us of that important fact.

    1. Hi Nancy. So sorry to hear you had a double whammy 9/11. You are always one who brings lightness to my world. I look forward to seeing you again this week 🙂 xo

  11. I love this tribute that you’ve put together, Marla! Everything looks just perfect, especially your cupcakes! Lady Liberty does look quite lovely on that whipped cream.

  12. What a wonderful tribute, Marla. Sunday was indeed an emotional day, remembering everything that was last on that day 10 years ago. Thanks so much for make it possible for so many to pay this tribute.

  13. So beautiful Marla. 10 years ago I was sitting in economics class in college when it all happened. I’ll never ever forget running back to my dorm room to call my family that lived in New York. This year, I was standing in line at airport security at the exact time. The whole airport stood still in silence together. It was so powerful.

  14. What a wonderful, beautiful post. The gluten free cup cakes, Yumm! Your styling is through the roof, awesome! Great colors, beautiful heart shaped plates, adorable tea towels, & love the NYC cupcake toppers. Brilliant! xo
