Creamed Corn Popsicles

Creamed Corn Popsicles. You gotta try this. With Memorial Day around the corner and July 4th hot on it’s heels, lots of popsicles will be enjoyed as well as a lot of corn on the cob. I always have fun creating my own little flavor adventures out of unexpected ingredient combinations.

Combining corn kernels with creamy coconut milk, blasting it all in the blender and sweetening it with my favorite vanilla stevia is dreamy. Bet you could have guessed that I have a Popsicle Pinterest board too…

Find yourself some sweet corn. Cook it up however you wish. Steaming it is good. Purée all the ingredients in your blender. It is that easy.

What do you have planned for the summer? Are you thinking lots of BBQ’s? We sure are! I love to grill. Thankfully here in the OC we can Get Grillin’ most of the year. I will also be a grill master in Telluride. Lot’s of these pops will be served at our BBQ’s whether at sea level or or high altitude home away from home.

  2. This is such a fantastic recipe, Marla! You’re so smart to combine the sweet corn (which I consider more sweet than savory anyway) with coconut milk. I bet these popsicles are divine!! Good trick for quick cooked corn – pop it in the microwave, with husk and all, for 7 minutes, then cut off the base. The corn will slide right out, fully cooked, with no silk hairs left!

    And you know what, I made avocado popsicles last week, didn’t like it at all. Waited for the whole thing to melt so I can blend & drink as milkshake instead. I’m gonna try your corn one next.

    1. Nisha, I am surprised the a avocado did not work out for you in the pops. I need to experiment with that a bit as I love avocado in sweets. I am now determined to do this 🙂
      You can adjust the stevia to taste in these pops. All depends on how sweet your corn is and how sweet you want your pops.

  8. So pretty! We had a sweet corn ice pop in Chelsea from People Pops a while back, and it was odd but really good. I like the coconut milk in the mix.

  11. Great combination for popsicle Marla. In Asia, they actually do eat corn with shaved ice in a sweet treat. There’s also a tapioca pudding that has corn in it and coconut milk.
