I’m always a fan of chickpeas, both for their flavor and overall tummy filling satisfaction. No meat needed in this Italian Chickpea Salad recipe. Chock full of summer tomatoes, parmesan cheese, olives and fresh basil. The lemon/olive oil dressing is simple and perfect.
