Summer is in full swing and salads are what we are craving to beat the heat. Lighter meals that can be enjoyed poolside or out of the picnic basket. I’m always a fan of chickpeas, both for their flavor and overall tummy filling satisfaction. No meat needed in this Italian Chickpea Salad recipe. Chock full of summer tomatoes, parmesan cheese, olives and fresh basil. The lemon/olive oil dressing is simple and perfect.
