Moroccan M’hanncha (The snake) Cake

If you are a fan of flakey, buttery phyllo pastry then this dessert has your name written all over it. This Moroccan M’hanncha aka: Snake Cake is named so because of the coil shape. This treat is fun to prepare and is total crowd pleaser. I recently cooked an al fresco Moroccan themed dinner for a group at Camp V and this dish took center stage. The guests all devoured it! If you happen to have some left over it’s wonderful to wake up to as well. Serve it for breakfast or brunch with plenty of coffee. You can make one large coil “snake” or individual coils. I liked that each guest had their own swirl to themselves!

Orecchiette has become the quintessential popular kid in the world of pasta. All pasta shapes are fascinating but Orecchiette offers something extra special. These “small ears” hail from Apulia, a region of Southern Italy. With a substantial texture, this shape holds up to most sauces and is perfect for those who love al dente, a firmer “chewier” profile. This shape is perfect for scooping up chunkier sauces.

The level of spiciness for the sausage is up to you. I prefer a minimally spicy, high quality breakfast sausage but you can go with sweet Italian or feisty, spicy Andouille in this recipe. Serving this dish family style is perfect for outdoor summer dining as an appetizer or main dish.

Grilled Salmon & Couscous in Foil Packets

Around here we’ve been enjoying the warmer temps and the ability to cook more outside. It’s so satisfying when a healthy, hearty meal can be cooked with virtually no clean up whatsoever. All you need for this simple recipe are portions of salmon (or any fish you prefer) fresh veggies and couscous. I added in some sun-dried tomatoes and sliced Kalamata olives to add to the flavor. Layer the ingredients on a piece of foil, season, wrap it all up and fire up the grill or oven.

This dish is great for entertaining and camping. Everyone loves the little mystery of finding out what’s inside the foil packets. You can’t go wrong with this recipe even if you’ve never cooked salmon before! The foil locks in moisture and flavor ensuring that your lovely piece of salmon turns out flakey, moist, and tender every single time you cook it.

Blue Corn Pancakes with Vanilla Crema & Raspberry Sauce

What brightens a morning more than a delicious stack of pancakes? I’m catering an event at CampV this weekend for 80 people and the menu request was for pancakes and bacon. I wanted to share something special at the brunch so I elevated traditional pancakes and added blue corn to the recipe. People these days are looking for something out of the ordinary and around here thinking outside the box is always in favor. Blue cornmeal is a staple in New Mexican cuisine and is used commonly to make tortillas. It has more protein than white or yellow corn and a sweet nutty flavor. It works wonderfully in pancakes. muffins, quick breads, cereals and more.

When it comes to campfire cooking, easy recipes that require minimum effort mean you can enjoy more time socializing before, during and after you cook. My boyfriend and I just launched a series of Campfire Cookouts at a new glamping venue called CampV. Located in Naturita, CO (52 miles from Telluride, CO) this Camp beckons the spirited wanderer to step back into nature. We absolutely love cooking for the guests and it’s super fun for me to come up with new and exciting menus to suit all the hungry guests, meat eaters, pescatarians and plant based.

Grilled Brie with Tomatoes and Basil

Recently we crafted a campfire cookout menu and fed eight amazing guests at Camp V, a historic boutique camp located just 54 minutes from Telluride, Colorado. The response to this Grilled Brie with Tomatoes and Basil was an overwhelming WOW and it’s guaranteed to be on the menu forever.

There’s nothing like melted brie paired with a fresh tomato/basil topping. The topping is reminiscent of a fresh caprese or traditional bruschetta topping. Serve with sliced baguette, crostini, pita chips. This recipe is best on the grill but easy and just as delicious prepared in the oven.

The Spring/Summer 2021 Pretty Dress Edit

As we enter into an exciting new season with way more freedom than last year, it’s time to choose a few pretty dresses to compliment the warmer temps. There are so many great pieces to choose from, included in this post are some of my favorites. Whether you are into prints or solids, short or long, brights or muted colors. Creamy Chipotle Sauce & Dip

I’ve always been one for sauce. In my opinion a delicious sauce adds so much more dimension and character to a dish. This Creamy Chipotle Sauce is a go-to for so many recipes. You can drizzle it over grilled veggies, taco salads, nachos, seafood, fajitas, in sandwiches, use as a dip and for anything else you can think of. The smokiness of Chipotle peppers cannot be compared to anything else out there. This sauce will last in the fridge for up to a week stored in an airtight container.

Homemade Strawberry Pop Tarts

We are just about to wrap an epic ski season here in Telluride, Colorado and my goal is to start cooking and baking way more! I get swooned easily by the slopes and whoosh, the days go by quickly and I don’t get nearly as much done as I would like. Great news is I had a serious craving for pop tarts the other day and these delicious Homemade Strawberry Pop Tarts came to be. They didn’t last long in our house and they got a unanimous thumbs up from all.

This recipe calls for a scratch pastry crust (trust me you will never want store bought dough again.) The real-fruit strawberry filling is to die for!
