I’m currently in Alaska having the best time ever. Yesterday I was on a helicopter tour of the Mendenhall Glacier. Talk about EPIC views…OMG! This trip is right up my alley with all these mountains, rocks & snow!! 
Before I head out on my next adventures today I wanted to share this amazing cocktail with you…. 
Have you ever had an Aperol Spritz? It’s a classic aperitif cocktail in Italy and certainly a refreshing drink that should be enjoyed here in the good old USA. 
You don’t even need a cocktail shaker for this one. All you need is some bubbly (Proscecco or Champagne) a bottle of Aperol, soda water & ice. You can use any ratio of ingredients you like, but the classic cocktail calls for 3 parts Prosecco, 2 parts Aperol & 1 part soda water. Garnish with a juicy orange slice.

Italian Wedding Soup was one of my favorites to eat at home & Italian restaurants. I’ve been cooking it here often. A healthy blend of veggies, mini meatballs & satisfying broth.
Traditionally this soup has an egg whisked into the broth at the last minute of cook time. I prefer a clear broth & I add tiny acini pepe pasta. I also add carrots to my recipe. I love the color & added veg bonus!
All you need to do is roll some meatballs, slice veggies, cook up pasta. Voila! Soup is ready in minutes!
This is an ideal meal, it’s filling, healthy & nothing else is really needed at the table! I always serve ours with extra cheese. Can never have enough of that!
This is the perfect week night or anytime meal. Simple to prepare & oh so delish! Hope you are having a great day!

This Milk Punch was one of the first things to catch my eye & I had to make it immediately! With warming cinnamon, vanilla, nutmeg, rum & brown sugar its irresistible…
We will be sipping this cocktail (the hot version) out on our deck later today…likely wrapped in blankets ’cause its freezing out there!
