The warm days in the mountains subside to cool evenings, thank goodness! We love our salads during the day. At night heartier, warming foods are what we crave. Our Telluride Farmers Market is loaded with stacks of beautiful carrots that I can’t resist stocking up on every Friday. This isn’t just any carrot soup.
