This weekend we skied, played hard & hit up great Aprés parties. Downtime was fun too. It was wonderful to get warm & comfy in our house with the fireplace roaring.   2. This looks amazing! I had a bad experience once with a vegetarian lasagna (it was the eggplant – A LOT of slimy gross eggplant) and haven’t touched it since. I do adore spinach though so I will be trying this recipe!

    1. Trust me Deana…this will be a way different & very enjoyable experience!! Be sure to press all the water out of the spinach before you mix it with the cheese.

  3. Is it possible to layer the lasagne one day ahead, place in the refrigerator, and bake it the next day? Has anyone tried this for this recipe?
