Thank goodness for go-to recipes that can be featured over & over again at dinnertime! This simple & delish lasagna is a hit in our house & I’m sure it will be in yours too! It’s about time for me to blog this Family Favorite Vegetarian Lasagna recipe. I’ve been making this dish for years and finally, I’m sharing it with you! Casseroles are very family friendly, the perfect way to assure leftovers!

Finally, it’s snowing here in Telluride! We are all so grateful & thrilled to see so much fluffy white stuff in the ski hills.
This weekend we skied, played hard & hit up great Aprés parties. Downtime was fun too. It was wonderful to get warm & comfy in our house with the fireplace roaring. I enjoyed plenty of time in the kitchen making this healthy, comfort food lasagna.

We all had a kick with these lasagna noodles. They became reason alone for a photo shoot! A fun & sculptural subject.
