Fusilli Mushroom Mac 'n Cheese

This time of year we crave comfort foods. Ingredients become a bit heavier to satisfy appetites fueled by cooler weather. This Fusilli Mushroom Mac ‘n Cheese is warming from the inside & out. This recipe is destined to become a family favorite ~ it sure is over here! Fusilli Mushroom Mac 'n Cheese | Your whole family will LOVE this pasta! MarlaMeridith.com Hope you all had a great weekend! We sure did, fall is spectacular here. My puppy & I attempted a foot race up the Ophir Pass. We were having a blast until the little guy decided to roll in a not so fresh porcupine. He came running up to me with quills all over his body & face. It was crazy!! I felt so bad for him ~ quickly I pulled as many quills as I could off him. My sweet puppy! MarlaMeridith.com We raced a bit longer (he seemed fine) but then he was whimpering in pain. Thankfully there was a car coming down the pass when pup refused to walk any more. We drove down the mountain & I got him home super quick. Moose came into our lives only one month ago & our love for him is boundless. It’s so sad to see your animal in pain. We bathed him & took out a few more quills. He is doing well but the vet will need to remove a few more today. Nuts huh?! Fusilli Mushroom Mac 'n Cheese | Your whole family will LOVE this pasta!     Aww your poor baby!! Getting hit by a porcupine is definitely a scary thing. Good thing your pup’s ok now. On another note, this pasta looks lovely! Can’t go wrong with mushrooms and cheese!

    Moose is adorable. Poor pup! As I kid I remember our dogs occasionally getting stuck from a porcupine. The worst! My brother had me sit on the poor thing while he pulled the quills. No fun.
    That said, this looks like a great meal for us this week.

      Thank you Aimee. It hurts so much to see our pets & children in pain. We want to protect them so badly. Moose will see the vet tomorrow. Today he is loving all the lazy attention around the house. Sounds like a lot of country pups end up with at least one porcupine encounter. None of which are fun for anyone!

    Marla, first off, I LOVE this pasta. Manchego & cheddar blend? oh my gawd. . and so sorry to hear about Moose (love the name by the way)!!! I can’t believe he ran into a porcupine! that’s crazy! poor thing. . I hope he is recovering well!

      Thanks Alice! Mr. Moose is doing so much better now. We had the vet over for a visit to take care of the last few quills. Glad you are digging my pasta too!

    Oh! What an adorable story. I miss having a dog so much. I always had one growing up, but living abroad and moving from country to country isn’t a great life for a dog. I have friends here who try, but I think it’s so mean to put the dogs on a plane and fly them half way around the world. What a traumatic experience! My mom’s dog has had a run in with a porcupine– not a fun experience or the dog or the owner!

      You are so right Michelle, the quills in the pup were just as traumatic for me as they were Moose. But I think probably even more so for me. The vet said that unfortunately they don’t learn from these attacks & would go for a porcupine again if given the chance. Argghhhhhh!
