It’s just over one week until Thanksgiving! Where is the time going?! We are going to enjoy a Friendsgiving this year as our family is quite far away. We will each bring a few delicious dishes to celebrate this tasty holiday. On my list is this Kale Salad with Butternut Squash & Pomegranate Vinaigrette, a colorful celebration of seasonal flavors. Also, these brussels sprouts and these dressed up sweet potatoes. You can see I have a veggie obsession going on this year.
