Monday’s here & it’s time for a great week ahead! Over the next two weeks i’ll be sharing delicious & simple desserts including this Strawberry Icebox Cake that all have 5 ingredients or less. These recipes are fantastic for Mother’s Day (make them with your kids) and for all kinds of celebrations big or small.

Soooooooo….What’s an icebox cake anyway?
Icebox cakes are simple and fun ways to whip up a dessert in a pinch.
All you do is layer whipped cream, wafer cookies (or in this case graham crackers) and let it sit at least 4 hours to overnight in your fridge. The cookies soften and make it easy to slice into like a cake. So cool huh! You can add berries, fudge sauce, nuts and all kinds of creative toppings. It’s fool proof and crazy delish!
