Peaches are in abundance in all the markets this time of year & I can’t help but stock up on them everytime I see them. Here in Colorado, local Palisade Peaches are everywhere. I just realized that there is a Peach Festival that I missed to last week that honors this glorious fruit in the peak of it’s harvest. Next year!

Let’s talk about pie…
I love it so and crave it often. I prefer an all-butter crust & lots of it! The filling here is a simple combination of fresh peaches, pure maple syrup and a hit of cinnamon. A little flour thickens the insides perfectly. What results is a jammy mix of peach perfection. You can feel a little less guilty as there are no refined sugars in this pie. It’s not cloying sweet….it’s absolutely perfect!
