Recipe: Blueberry Carrot Frozen Yogurt Popsicles

Sometimes there are random ingredients in the house. Ones I've never thought to put together in one recipe. Carrot? Blueberry? Sure ~ why not right?In these Blueberry Carrot Frozen Yogurt Popsicles I use frozen blueberries, carrot juice, thick Greek yogurt.

 1 1/2 cups fresh or frozen Blueberries
 1/2 cup (4 ounces) Carrot Juice
 1 1/2 cups Fat Free Plain Greek Yogurt
 1/4 cup Honey

Whisk together carrot juice, yogurt & honey in a bowl. Gently mix in blueberries. Fill popsicle molds and freeze undisturbed 4 hours to overnight. Release pops from molds & enjoy!
