Granola is great for on the go meals & perfect for when you have house guests too. You can easily make a double batch so you have it at the ready.
If you cannot find dried blueberries you can make them yourself! Lay 1 pint of fresh blueberries on a parchment lined sheet pan in a single layer, Bake for about 40 minutes until they have bursted and become all wrinkly.
To make granola: In a large bowl combine the oats, coconut oil, maple syrup, vanilla extract and salt. make sure the oats are coated well.
Transfer to a sheet pan and bake at 250 degrees fahrenheit for 15 minutes. Toss granola with a pair or tongs and rotate the pan for even baking. Bake another 15 minutes. Add the almonds & chia seeds, bake for another 2 minutes. Remove from the oven. Let cool, fold in the dried blueberries.
Serve with milk or yogurt.
