Do you know much about chia? These tiny little seeds are packed with the richest plant based source Omega-3’s. They are an excellent source of dietary fiber, protein & antioxidants too.

2 tablespoons black or white chia seeds
1 cup purified water
2 cups frozen mixed berries (any berries you love + more for garnish. raspberries, strawberries, blueberries, marionberries)
pinch of ground cardamom
1 cup plain unsweetened almond milk
2 tablespoons pure maple syrup, honey or agave
2 teaspoons pure vanilla extract
1/2 ripe avocado
squeeze of fresh lime juice (my addition)

In a liquid measuring cup or small bowl combine chia seeds with water, whisk together & let stand for about 20 minutes. (Makes about 1 1/8 cups chia gel.)

Place the chia gel, frozen berries, cardamom, almond milk, maple syrup, vanilla, avocado & lime juice in a blender. Cover & blend on high until thick & creamy.

Pour into 2 glasses. Garnish with additional berries (I used frozen goji berries) and a lime wedge. Serve immediately.
