This Vegan Chipotle Avocado Toast recipe is delicious for breakfast/ lunch or a mid afternoon snack.
1 ripe avocado
juice from 1/2 fresh lime
1 shallot (2 tbsp) minced
2 chipotle peppers in adobo sauce, minced (add to taste)
salt and pepper to taste
2 slices of rustic bread, toasted
-Top with
sliced green onion
minced chipotle pepper
minced cilantro

Prepare the avocado spread. In a bowl, mash the avocado. Mix in the lime juice, shallots, peppers. Add more or less peppers according to taste. Season to taste with salt and pepper. Spread this mixture over your toast.
