Feta & Artichoke Guacamole Toast

I just got back from another journey. These days I travel pretty much every other week. It’s only gonna get more nuts now that festival season is here.

Why so much travel? I get called out on amazing adventures to shoot photos. Also to share the experiences with you. What that also means is I will enjoy many meals like this Feta & Artichoke Guacamole Toast. Simple healthy meals that take about 5 minutes to prepare.

Prep Time5 mins
 2 ripe Avocados
 2 tablespoons fresh Lemon Juice
 1/2 cup diced Artichoke Hearts (about 3 hearts)
 1/4 cup diced Green Onion
 1/4 cup crumbled Feta Cheese
 Season to taste with: Garlic Salt, Black Pepper, Smoked Paprika
 4 pieces Whole Grain or Gluten Free Toast

Cut the avocado in half & scoop out the flesh, discard pit, In a bowl mash avocado with the back of a fork. Mix in lemon juice, artichokes, feta & green onion. Season to taste with garlic salt, pepper & smoked paprika.

Slice toast in half or quarters. Spread each piece with some guacamole spread. Top with additional green onion & feta cheese.
