Hush Puppies

Hush Puppies are a classic southern recipe that will be the hit at all your summer parties. Serve them at July 4th gatherings & everyone will love you! I was inspired to fry these up when I heard about the new show on Ovation TV starring The Lee Bros. The show is called Southern Uncovered & I can’t wait to watch it!

 1 1/2 cups self rising cornmeal
 1/2 cup self rising AP flour
 1/2 teaspoon smoked paprika
 1/2 teaspoon salt
 1/2 teaspoon sugar
 1/4 teaspoon black pepper
 1 large egg
 1 cup buttermilk
 1/2 cup chopped sweet onion
 peanut or canola oil for frying

Whisk together flours & seasonings. In another bowl whisk together buttermilk & egg. Combine all & mix well. Let sit 15 minutes.

Preheat oil to 350 degrees in a large skillet, you should have about 3 inches of oil in the pan. Drop the batter by the tablespoon (I like to use s small ice cream scoop) Fry 3-4 minutes or until golden brown, careful not to let them burn. Also, be sure not to overcrowd the oil or the temperature will change. Drain on a paper towel & serve hot.
