Recipe: Italian Tortellini Salad

This Italian Tortellini Salad is so delicious, perfect on it’s own or served as a side with your grilled favorites. Chock full of hearty ingredients: Italian salami, olives, marinated artichokes, parmesan cheese and more. This mayo-free salad is great to take on long hikes and camping trips too.

 2 (9 ounce) packages refrigerated cheese tortellini
 8.5 ounces sun-dried tomatoes in oil, chopped
 5 ounces artichoke hearts in water, drained and chopped
 1/3 cup shredded parmesan cheese
 3 ounces genoa salami, sliced
Italian Dressing
 3/4 cup olive oil
 1/4 cup red wine vinegar
 1/2 teaspoon dried garlic powder
 1 teaspoon dried oregano leaves
 1 teaspoon dried thyme leaves
 1 teaspoon dried basil leaves
 1 teaspoon kosher salt
 1/2 teaspoon freshly ground black pepper

Cook tortellini to package directions. Drain and rinse with cold water.

Place all dressing ingredients in a mason jar. Close the lid and shake well to combine. Makes 1 1/4 cup of dressing.

Toss the tortellini with the dressing (to taste) and the other ingredients. Serve chilled.
