Recipe: Lobster Rolls

Lobster boils are a fun way to entertain. Leftovers can be used in so many ways. Just make sure that you have a gigantic lobster pot at the ready when your lobsters arrive at the door!

 1 1/2 pounds cooked lobster meat (tails & claws are the best part!)
 1/2 cup mayonnaise
 1/4 cup capers, coarsely chopped
 3 tablespoons chives, minced
 2 tablespoons freshly squeezed lemon juice
 2 celery stalks, finely chopped (I prefer the inner stalks with the leaves)
 2 tablespoons fresh parsley, chopped
 salt & freshly ground black pepper
 4 hot dog buns
 melted butter

Cut lobster into small pieces. Combine with mayo, capers, 2 tablespoons chives, lemon juice, celery, parsley, salt and pepper.

Toast the hot dog buns. Brush with melted butter. Fill the buns with the lobster salad, top with remainder of the chives. Serve immediately. Enjoy!
