Maple Cinnamon Matzo Brei

Have you ever tried or even heard of Matzo Brei? No matter what your answer, nows your time to cook up this fantastic Jewish dish for Passover or any time at all!

 4 sheets matzo
 2 eggs
 2 tablespoons pure maple syrup
 1/2 teaspoon ground cinnamon
 1/2 teaspoon vanilla extract
 pinch kosher salt
 plenty of butter for frying

Break matzo into pieces. Soak for 2-3 minutes in warm water. Place in a colander & press out any liquid you can.

In a bowl whisk together egg, maple, vanilla, salt & cinnamon. Add the softened matzo.

Heat a pan with a pat of butter. Add 1/3 cup of mixture & flatten with a spatula. Cook for a minute until golden brown & flip. Cook another minute. Continue with the rest of the batter.

Serve with butter, maple syrup, fresh fruit & whipped cream.
