To make granola: In a large bowl combine the oats, coconut oil, maple syrup, pistachio extract and salt. make sure the oats are coated well.
Transfer to a sheet pan and bake at 250 degrees fahrenheit for 15 minutes. Toss granola with a pair or tongs and rotate the pan for even baking. Bake another 15 minutes. Add the pistachios & chia seeds, bake for another 2 minutes. Remove from the oven. Let cool, fold in the brown rice cereal & raisins.
Serve with milk or yogurt.
