Pistachio Granola

This delicious, nourishing Pistachio Granola is exactly what you need to kickstart your day in an energizing way. Make a batch or two and you have it a the ready when you need it most.

 2 cups old fashioned rolled oats
 1/4 cup coconut oil, melted
 1/4 cup pure maple syrup
 2 teaspoons pistachio or vanilla extract
 pinch of salt
 1 cup unsweetened brown rice cereal
 3/4 cup unsalted pistachios, roughly chopped
 1/2 cup raisins or currants
 2 tablespoons chia seeds

To make granola: In a large bowl combine the oats, coconut oil, maple syrup, pistachio extract and salt. make sure the oats are coated well.

Transfer to a sheet pan and bake at 250 degrees fahrenheit for 15 minutes. Toss granola with a pair or tongs and rotate the pan for even baking. Bake another 15 minutes. Add the pistachios & chia seeds, bake for another 2 minutes. Remove from the oven. Let cool, fold in the brown rice cereal & raisins.

Serve with milk or yogurt.
