32 ounces fresh pressed apple cider
2 whole anise pods
1 cinnamon stick
1 tbsp fresh ginger, coarsely chopped
24 ounces your favorite dry Champagne (or Prosecco)
For garnish
chopped apples
cinnamon sticks

In a saucepan bring the cider to a simmer with the anise, cinnamon, and ginger. Cook for 15-20 minutes. Remove from the heat and strain out any solids.

Chill the spiced cider until cold. Pour some cider into Champagne flutes, top with cold Champagne. Garnish with some apples and a cinnamon stick.
