Recipe: Strawberry Vanilla Pancakes

Bursts of gorgeous summer flavor…fresh strawberries are our favorite! Enjoy them out of hand and in these Strawberry Vanilla Pancakes. Take a break from your morning oatmeal and whip up these beauties.

 1 cup white whole wheat flour
 2 tablespoons pure maple syrup
 2 teaspoons baking powder
 1/2 teaspoon salt
 1 egg, whisked
 1 cup 2% milk (or any kind of milk you prefer)
 2 tablespoons melted butter
 2 tablespoons pure vanilla extract
 1 cup chopped fresh strawberries
 powdered sugar, butter & maple syrup for topping
 European cultured butter for cooking

In a medium bowl, whisk together the flour, brown sugar, baking powder and salt. Pour in the milk, butter, egg and vanilla. Mix all together until well blended. Fold in the chopped strawberries.

Heat a large skillet or griddle over medium heat.

Place a nice pat of butter in the pan and spread around. Pour 1/4 cups of the batter into the pan. Gently flip with a spatula when bubbles appear in the center & the edges are cooked. Cook pancakes until golden brown on both sides.
