One of my all time favorite ingredients this time of year is tiny tart cranberries. One of my favorite foods for breakfast, brunch and snacks is homemade cornbread. Combining them both into a fiber filled muffin is perfection!
These little muffins are the perfect blend of fall/winter flavors. Serve them to your kids before school & also to your Thanksgiving & Christmas guests. They will be glad you did!
I’ve teamed up with Benefiber® to host a brunch to test out a few recipes on my family & friends.
Adding just a small amount of their easy to use fiber powder to my cooking helps supplement our daily whole food diet.
We have used this powder on & off for years. In oatmeal, shakes, smoothies, breakfast cakes & these muffins.
You can learn more about the benefits of fiber here.
The great thing is this fiber powder dissolves easily and is tasteless. Another cool thing is how well it bakes into cakes & muffins. The crumb is still perfect!
You will love these maple sweetened cornbread muffins ~ serve with some butter, peanut butter, almond butter or whipped cream!

I am SO into these! Yum!!
Love these muffins!
I love that these beautiful seasonal muffins are gluten free! (that first shot with all the little hands is adorable!)
Wonderful! A great snack.
Cheers,
Rosa
I’d like to have one for each hand, like your first shot! 🙂
We might top these with a little more maple syrup, but that is okay, right? 😉
love the cranberry and cornbread combo!! these muffins look perfect for this holiday season!
Marla, your muffins sound and look delicious! These are on my list to make! And your photos are beautiful! Thank you so much for including the link to my cinnamon-sugar pumpkin muffins! Have a great day!
You are soooo welcome & your muffins look amazing!
I’m just gonna have to sneak some of Benefiber into my little guys breakfast muffins now!
Ha! Try it 😉
What great flavors! These would be perfect for T-Giving dinner!
Looks like they were a big hit with the kids. I would have one or maybe two if I was there.
They were pretty small – two would be fine!
Beautiful cranberry cornbread muffins, Marla! I love that they are gluten free and that you used pure maple syrup to sweeten the batter. Thank you for sharing!
Marla, I’m loving all the gluten-free recipes you’re sharing – and this one is no exception. Looks delicious!
These look great! What can I use instead of the almond flour? We have nut allergies? Thanks!
Try more fine cornmeal or oat flour. I did not test without the almond flour though. Let us know how it turns out if you try 🙂
What if we don’t have the benefiber powder? Can I substitute something for it or omit it?
Great question! I did not try baking them without the fiber powder – but if I did I would simply omit it. Please let me know if you try. These ingredient ratios are ones I typically use. Without the powder.
Mmm! The cranberry and cornbread combo sounds so good!
Love this, Marla – great minds think alike! I literally just made GF cranberry cornbread muffins! I’m definitely going to have to try your recipe, they sound delicious with maple syrup!
Nice cranberry muffins!
I love these flavors, these muffins would make a nice addition to the Thanksgiving table!
Cornbread is my weakness, especially in cute, individual servings like this!
Cornbread is amazing, I cannot wait to give this recipe a try 🙂 I bet it tastes perfect!
