Gotta say I never used to like angel hair pasta. It was too thin for me (and generally overcooked.) Didn’t have enough bite. Well thankfully i’ve decided to play with it & give it a second chance.

Second chances can be really good. Especially when these pretty, thin noodles don’t over cook into a mushy mess. And even better when you make Angel Hair Pasta with Pumpkin Cheese Sauce.

I was rather impressed how this angel hair looked in it’s packaging.

Worthy of it’s very own super model photo shoot…

In color & black + white, it was very attractive either way.

Even more so when sauced….

Pumpkin, cream cheese & ricotta make up this simple, light & healthy sauce.

Topped with more creamy sauce & parmesan things get even better!

Here is another Pumpkin Mac & Cheese I posted. You will love this one too.

Yield: 2 servings

Angel Hair Pasta with Creamy Pumpkin Cheese Sauce

  • 4 ounces Angel Hair Pasta (cook according to package directions, I like mine al dente)
  • 2 tablespoons softened Cream Cheese
  • 1 tablespoon melted Butter
  • 1/2 cup Fat Free Ricotta Cheese
  • 1/4 cup Pumpkin Puree (unsweetened)
  • Garlic Salt
  • Black Pepper
  • pinch ground Nutmeg
  • Sauce
  • 1/4 cup Pumpkin Puree (unsweetened)
  • 1/4 cup Cream Cheese
  • Season to taste with Garlic Salt, Pepper & Nutmeg
  • Toppings
  • Fresh Herbs
  • grated Parmesan Cheese

  • In a large bowl combine cream cheese, butter, ricotta and pumpkin. Cook angel hair pasta to your liking. Drain, save a little of the pasta water. Toss the pasta in the cream cheese mixture ~ adding a touch of the pasta water if needed. Season with garlic salt, pepper & nutmeg to taste. It is best to toss with your hands or tongs.
  • In a small skillet heat the cream cheese & pumpkin over medium heat. Stir until well combined. Spoon over pasta. Top with herbs and parmesan cheese.

Great job on this Marla! I want that yellow wood piece you have, too. What a gorgeous find! Did you make it or buy it? I can’t even begin to embark on

Ha! Funny you should ask Averie. I actually painted a bunch of boards back when I lived in CA.No time for it now.

Pumpkin and cheese together is an automatic winner in my book. Toss pasta into the mix and I’m a very happy girl!
