Pepperoni Mozzarella Grilled Cheese. Isn’t that all you need to know.

I stopped at the farmers market recently and couldn’t wait to get home to take some pretty photos.

Hello there! On Friday I had to share a cocktail to kick off the weekend ~ so I owe ya a lunchbox.
Last week I went on a field trip with my daughters class. A really fun historical tour of our awesome town! She packed her lunch (The Worlds Greatest PB&J) & I packed this energy packed Quinoa & Chickpea Salad.

Happy Friday! I do believe it’s time for happy hour ~ or at least it will be in about 12 hours, at 5:30pm. My kids are obsessed with Izze’s. I mean really obsessed…as soon as they see them they go nuts. Crazy nuts, like Izze’s are the best thing that could ever happen to a person. I’m obsessed with really good cocktails. With a strong preference for fruity ones. So what is a girl to do? She’s to take her kids treasured Izze’s and makes Izze SkinnyGirl Cocktails…that’s what!

All you need to do is get your hands on your favorite Izze flavors (I bought all the ones I could find)
Grab some pretty glasses, ice…

And of course your favorite spirits. For me Skinny Girl Tangerine is super awesome mixed with all sorts of fruity flavors.

And I don’t have to worry about slipping into my skinny jeans.
Always a bonus.

You can go all matchy matchy with the fruits you add to the drinks ~ or you can mix ’em up for kicks.

I say be wild & go for kicks.

Go git ’em, have a great Friday…and enjoy some fruity punch cocktails.

Hope you all enjoy your weekend!

A lot of times we crave pasta ~ but not truly in pasta form. Cheesy Spaghetti Squash can be a GREAT gluten-free, healthy alternative.
Let’s pack this simple, tasty meal in the lunchbox. You & your kids will be glad you did….

Wow! I’m so impressed by the latest cookbook Weelcious Lunches by my pal Catherine McCord.
We talk about How to Pack a LunchBox a heck of a lot around here. So does Catherine on her amazing blog Weelicious. There are sooooo many stand out recipes in her book, as soon as I saw this one for The World’s Greatest PB&J I had to give it a whirl.
I mean who doesn’t love waffles & peanut butter ‘n jelly?

This pasta salad can be whipped together in no time at all and can be served all year long. My kids are obsessed with little mozzarella balls, small sea shell pasta and these teeny tiny tomatoes. All of which come together to create the perfect Caprese Pasta Salad!
Dig in…

We plan on being lazy today.

And we plan on munching on plenty of this pasta salad. I found these teeny tiny tomatoes in Dolores, CO. On my way back from Durango. On my way home to Telluride.

I love the small towns around here. There is so much to explore in each one! I also love how each of these ingredients are about the same size…the tomatoes, shells and mozzarella fresco.

I had no basil on hand, which would be traditional in a Caprese salad. No worries though. Fresh cilantro was a very tasty replacement.

Hopefully, you can try this recipe soon and don’t forget to pack some in your lunchbox too!
