Sometimes life hands you great big adventures. Sometimes on those adventures you stumble across pretty red barns.

On my way out to Hotchkiss, CO a few weeks ago I stumbled upon this beauty. I am attracted to barns and snow capped mountains ~ like a bear is to honey. Or a hummingbird to nectar. You get it.

These beauties beckon and thrill all my senses. I dip in and taste the experience through the lens of my camera.

Not sure about you guys, but geesh have things been busy around here. Weekdays and weekends are full of outdoors fun. Between the excellent skiing & my visits to North Rim Hunt Club….it is rare that I am home.

 

Being in the house to cook usually happens aprés ski. I enjoy winding down while buzzing around the kitchen. Meals need to be simple, healthy, delicious and at the ready at all times. My Orzo Pasta with Roasted Broccoli & Chickpeas recipe will give ya great energy for BIG days on or off the slopes. It’s perfect for picnics & travel too!

Toasted pine nuts are gonna up the anti for this pasta. If you don’t have these, use another nut. Chopped walnuts and pecans would be great too.

After we had kids there were big changes in how we travel. No longer were teeny tiny hotel rooms considered an option when packing bags for four. They are OK for brief stints, but for longer vacations we need plenty of room to play, move, do cartwheels and cook.

Back in the honeymoon phase, all that mattered to me was 5 star status, a high thread count, in room coffee maker (this is still essential) and great views. Now that is all fine and dandy when I travel alone for business….but with the family other priorities prevail.

These days my top travel requirements are living in a condo or home  that has a well stocked kitchen (of course.)

When I got back from my winter trip to Minnesota I knew it was time to chase my dreams of learning how to shoot and hunt here in Southwest Colorado.

The question was who, what, where? You can’t just head out your back door & start shootin into the sky. You need the right teacher, location and training. Learning how to properly handle a firearm is important to me, as it should be for anyone who wants to handle a lethal weapon…

My goal with all of this? I want to bring the food we eat full circle….from field to table.

Want to impress someone? Serve ’em quail. Want to not impress someone? Serve ’em quail

Before we begin this culinary adventure we need to understand a few things. I am a teeny tiny gal  ~ Quail are teeny tiny little birdies. When skiing, I pretend I know how to fly. A quail obviously can fly. Those are two things we kinda have in common.

I eat more than the average bear. I have no idea how much a quail eats. What I’m sure of is, that up until this experience…..after a quail dinner I have been left wanting to eat a bear. Or an elk. Or anything of size.

Amazing how not so good experiences can leave their marks…that is until rays of light strike and revelations are brought to life.

I am forever changed….

It’s about time I shared a recipe for baked eggs around here. Whenever I see a photo of them online I stop and gawk. Is it OK to say they take my breath away? All right, that might sound a bit too much, but really they do. Food and photo obsessed, that’s me.

Are you ready for some fun today? I sure am. Not only am I volunteering for my sons Ski PE class. Yes, you heard me right. SKI PE. Yet another bonus to living in the snowy peaks of Telluride. The kiddos have ski class with their pals one day a week. This dish is for dinner after such a grueling day…

I like to dabble in a little of this and that when it comes to ethnic flavors. Here I play with one of my favorites Thai Red Curry Paste.

These Thai Beef Lettuce Cups (or wraps, if you will) will knock your socks off. For lunch, dinner, winter, spring, summer or fall.
