A funny thing happened yesterday. I mentioned to my husband that people are crazy for all kinds of smoothies and shakes. I also said that I didn’t share the passion. As a great husband who is always honest and forthcoming he responded back “Are you nuts? You have at least one shake per day, usually more like two.” Thanks my dear, I now stand corrected. The guy is right. It is usually my homemade Frappuccino or a version of that. I have been wanting to capture the flavors of carrot cake in a glass. Happily with this recipe I have.
Sure there is no cake in here, but the flavors of this homemade classic dessert are brought to life in a creamy, dreamy, health filled shake. Grab the freshest bunch of carrots you can find, and don’t forget to roast them first. That makes all the difference in the world. Roasting them with some coconut oil and spices brings out the most delicious flavor in this shake. A mixture of coconut milk and almond milk add to the perfect creamy blend.
Coffee and chocolate are usually the stars in my shakes. It is nice to have a twist. This shake tastes like melted coconut carrot ice cream. With little hits of cinnamon, nutmeg and ginger everything comes together nicely. It is also a great option for those on gluten free, vegan and grain free diets.
Freeze your coconut carrot shake and add it to your lunchbox. By the time lunch or snack time rolls around you have a healthy treat at the ready. Much better then diving into the office lunch room or vending machine.
I love texture with my shake, something to chew on. If you do too then top yours with chopped toasted nuts (I love walnuts), shredded coconut, raisins, flaxseed or graham cracker crumbles (find gluten free versions for intolerances.) I styled ours with some curly cue carrot slices to. Kinda weird, but fun. You might need a fork with these!
This shake has become a new favorite in our house and I will be blending them up all the time!

Was there a message somewhere that Monday is a shake day and I missed it?! A lot of shakes-smoothies I see today, which is great! This looks wonderful! How did you make your carrot slices? I love this shake, fork or spoon, it looks delicious! I am sure roasted carrots add an interesting flavor to it. Well done!
Marina, it must be shake day! I made those curly cue carrot slices with this awesome OXO GoodGrips Lemon Zester. Glad to hear you are good for the fork or the spoon 😉
This shake sounds fulfilling and a nice healthy way to incorporate a great mix of flavors. Great idea to add such textural toppings!
Kristina, the texture gives these shakes more kick & energetic ingredients. A happy way to get through the day 🙂

What a creative shake recipe Marla, and those toppings look like fun.
What a fabulous shake! I’ve never thought to add roasted veggies to my smoothies, but this is going to the top of my smoothie/shake list to make!
To have “carrot” and “shake” in the same recipe title – very impressive!
Marla! This looks outstanding! I’m so intrigued, and that doesn’t happen as often as it should. Plus, killer photographs!! Love this recipe.
Thanks Mike. Coming from an amazing photographer like you ~ this means so very much! Intrigue is a great thing indeed!
Thank you for posting this recipe. I have been looking for a way to enjoy carrot cake without the guilt!
This smoothie is very exciting to me. The furthest I’ve ever gone with veggies my my smoothies is spinach, but carrots are bold! This sounds like such a treat and looks so tasty. I cannot wait to try it!
Alyssa, the carrots pair so nicely with the coconut and almond milk. I do hope you have the opportunity to try it!
What a fantastic looking shake!! I would never in a million years think to make a shake from roasted carrots, but now that I’ve seen it it does make sense given the beautiful sweetness of carrots. What a brilliant idea!
This looks so good, Marla!! I bet my kids would love it too.
Love these! How creative!
I love Angela’s recipe for a carrot cake smoothie, so I think I would love this one too! I’ve never roasted carrots before (gasp!) so I am intrigued! Definately going on my to make list 🙂

Amanda ~ too cool, yes! Silly you 😉
That looks so drool-worthy, Marla! I love a good smoothie/shakes for breakfast or snacks. I think this qualifies as a “gourmet” shake recipe for sure 🙂
Kiran, yup I would agree ~ it is a bit more gourmet than most 😉
Outstanding! Carrot cake in a glass is brilliant.
Mmmmmm this looks really mouth watering, I am off to the kitchen to make one. Thanks Dciane
I think we share part of the brain – I’ve been dealing with a roasted carrot smoothie on the brain, I just haven’t had a chance to make it yet. I can’t wait! Your version sounds incredible 🙂
Hi Cara! We do tend to think along the same lines when it comes to this kinda thing. I am happy you are into the roasted carrot shake thing too ~ enjoy girl! Can’t wait to hear about your version 🙂
i totally say things like that all the time! Like, whenever I tell my roommates that I don’t eat much gluten – false. But I’m really convinced that I don’t. It makes no sense.
These shakes sound amazing! Pinned.
“tastes like melted coconut carrot ice cream”…count me IN!!!
This looks and sounds absolutely delicious! I love the flavor combination!
Looks delicious, and easy although the roasting of the carrots takes a little time…
Sofia, you are correct ~ roasting the carrots does take a bit of time but so worth it! At least not active time so you can run around doing other things. I recommend making a large batch at one go so you can enjoy shakes and recipes with those carrots for a few days.
There’s no recipe here? I’m lookin at this on Chrome via Android. All chit chat, no info?
