Kung Pao Chicken

Forget the take-out, you can have this favorite Chinese dish ready in under 30 minutes in the comfort of your own home. My family loves Kung Pan Chicken, but I wanted to make this traditional dish a bit healthier and lighter than what you might find in a restaurant. Restaurant versions can be overly salted, they use lesser quality ingredients and sometimes the sauce is a bit gloppy. My version is light, bright and really tasty. If you are lucky enough to have leftovers you will love this for the kids lunchbox and a quick grab and go meal for yourself.
