I am on my way home from a spectacular journey to Northern Minnesota. Ya know when you go on a life changing trip somewhere?

You find a place that touches you and you are not so sure why….but it just does. Deeply. A beautiful snow covered land, that is where I was. I made great new friends. People that I hope to see time and time again.

While there I feasted on GIANT handfuls of this Lemon Pepper Popcorn every given opportunity.

Nature calls to me. I used to be more of a city gal. These days I desire wide open spaces. The only squeeze I want to feel is that of trees. Not buildings.

I get the outdoors thing. Winter’s crispy cool – invigorates and excites my soul & spirit.

All you need is 3 ingredients: Olive oil, popcorn and lemon pepper seasoning.

That’s it.

Drizzle. Pop. POP. Sprinkle. MUNCH.

This popcorn will last a few days  if you allow it to.

Store in a lightly covered bowl (just cover with a dry kitchen towel.)

Serve this at your Super Bowl parties or any time at all. Leave a bowl out for house guests.

Lemon Pepper Popcorn

Ingredients

  • 1/4 cup Olive Oil
  • 1/3 cup Popcorn Kernals
  • Lemon Pepper Seasoning

Method

  • Heat the oil and popcorn in a large, deep metal pot over high heat. Have the pot lid and a large bowl handy. The oil will sizzle and the popcorn will start to pop. Cover with the lid and agitate/slide the pan around vigorously. When about to overflow dump the popcorn into the bowl. Continue to do this until all of the popcorn is popped. While hot toss with lemon pepper seasoning to taste.

  1. The popcorn sounds so good, and I agree, the crunch would be satisfying too. I hear you on the being surrounded by trees instead of buildings, too! It’s a bit of a commute for me into work, but so worth it… I live near a gorgeous forest full of trails. My serenity. Glad you had such a lovely experience in Minnesota!

  3. I used to be such a city girl myself, and while I still love the high energy of big cities, I appreciate the quiet… the wide open space… the quiet… 😉

    popcorn to me is one of those weird things, it never really sounds good, but once I start eating it… YUM. lemon pepper sounds fantastic!

  5. I make popcorn almost every day! I love it that much! I pop it in a brown paper bag in the microwave. 2 tbsp of kernels, 1 sack folded over twice at the top, 90 seconds. No oil, no butter, no nothing. Just that and it’s ready! And then I love to top it with nutritional yeast and stevia. Salty, cheezy, and a tad sweet. I am trying lemon pepper next! Right up my alley!

    • Averie, I usually go au natural like you do. LOVE the brown paper bag thing. Have not tried the nutritional yeast and stevia though. Gotta tell ya ~ the oil is a really nice (slightly more indulgent) twist for a change.

  6. I am SUCH a huge popcorn fan. We make it all the time here, my girls love it too. And I love lemon pepper seasoning so I am going to be trying this soon. Those winter pics are gorgeous and seeing all your pics you post of Telluride make me miss living in Colorado. My husband and I met while living in Vail, CO. We looked into moving to Durango – and I went to school in Denver and Colorado Springs. So we are very fond of the state.

I love the crispness that winter and snow brings (although it is cold…and my friends do think I’m a wee bit weird for loving the cold) and just the short description you gave makes me want to go there too! :)

    • Oh Kathy, I have been a bit odd my whole life ’cause I prefer the snowy winters days. They are so soothing to me. Glad to hear there is a fellow fan 😉

  8. I would much rather live in country/forest/nature areas too, yet somehow I seem to only live in cities. I blame my hubs 😉 We always say how we want to retire in Alaska, or somewhere really mountainous or by the water somewhere. It calls to us haha. I could use a big ole bowl of this popcorn too right now
