Roasted Strawberry Apricot Mini Parfaits

If your obsession with summer fruits is already being happily entertained…do yourself a favor & whip up these darn great Roasted Strawberry Apricot Mini Parfaits. Have you ever had roasted fruit before? Adding heat intensifies the flavors and makes for an epic summer treat!

 8 ounces fresh strawberries, sliced
 3 apricots, sliced
 2 tablespoons pure maple syrup
 pinch of salt
 8 ounces mascarpone cheese
 2 tablespoons pure maple syrup
 pinch of ground cinnamon
 5 ounces ginger snap cookies, crushed

Preheat oven to 350 degrees with the rack in the middle. Prepare a baking sheet with parchment paper or a silicone liner. Lay the apricots and strawberries on the baking sheet & toss with the maple syrup. Make sure the fruit is in a single layer. Bake for 25-30 minutes or until the fruit has released it’s juices & looks cooked through.

Combine the mascarpone with maple syrup & cinnamon according to directions or to taste. Assemble the parfaits: layer the roasted fruit, maple mascarpone & crush cookies 1X each. Top with sliced fresh fruit & ginger snaps.
