cookies you can enjoy for breakfast, snacks & dessert….even better! These Soft Pumpkin Cookies are filled with high quality ingredients that makes them way more guilt free than most of the other recipes you will come across. Let’s get baking… This week has been super busy. I returned from one trip with just a few amazing days to spend at home. I baked these cookies with my kids, hiked & played with Moose pup a bunch & re-packed suitcases for my Caribbean cruise. My hubs is home to hold down the fort & doing great so far! I’m so grateful he is willing & able to take care of the kids while I travel for work. I take photos every opportunity I get of the beautiful landscape at home. Right now I’m in Miami enjoying a early morning cup of coffee while I tap the keys on this post. The cruise launches later this afternoon & I’m super excited! We had just a few of these cookies left & I took them on the plane with me & they were the perfect travel snack! Looking for more sore cookies? You must try these Brownie Peanut Butter Muffin Top Cookies… My soft pumpkin cookies are sweetened with date sugar (a new favorite along with coconut sugar) I’ll miss baking this week, but I’m so excited to hit the seas! Savor these pumpkin cookies with steamy coffee or dip in milk. Enjoy… For Recipe Details Click Here Pumpkin Cookies you gotta try!

It’s a beautiful brown sugar ~ great flavors & equal measurements to white sugar. I’m so happy I found it!

Yum! Why did you stop using stevia?
Great question Erica! First off I had heard that my favorite brand had made some not so grey changes that affected its taste. After we moved to Telluride I started using more natural types of sugars in moderation. Think I will keep going in that direction. I use stevia sparingly these days.
Thanks for the recipe 🙂
I´ve try todo them but I´ve had a problem with the dough, it was toosoft to roll it and I had to add more flour. 2 1/2 cups is the right amount of flour?
Thanks!
