For Meatless Monday I’m offering up this gorgeous Cream of Kale Soup. It’s healthy and completely delish. The green swoons. This soup will warm you from the inside out. It’s light but also a full meal. Serve with a wedge of farmhouse cheese (if you aren’t vegan) or a thick slice of crusty bread. If you don’t want all that this soup is just as perfect all on its own.
